Extra virgin olive oil:

Extra virgin olive oil – “Liquid Gold”
Inside our farm are cultivated centuries-old olive trees for the production of our extra virgin olive oil. The varieties of olive trees we cultivate are Curgiolo, Frantoio, Moraiolo e Leccino.
They grow on clay-free ground at 290 meters on the sea level with south-east and nort-heast exposure.
Olives are harvested by hand in the months of October and November, the work is done by mechanical shredding where the olives are separated from the leaves and washed by grinding disks that crush the drupe with little friction so as to avoid heating, then it is passed to the cold grinding where the “pasta” obtained from the grinding is reshaped allowing the oil to separate from the matrix.
